When I was a kid, my mother used to grate Jonathan apples, with the skin, and add them to her pancake batter along with a teaspoon of cinnamon. The grated apples would soften a bit as the pancakes were cooked. There would be a taste of apple in every bite and glimpses of red poking through. They were my favorite pancakes.

Years later, I discovered that I could mash bananas and add them to my pancake batter. Still later, I added pumpkin puree. Finally, I found that all three were especially scrumptious with cinnamon chips.

This weekend make very scrumptious German apple pancakes

We asked Debbie to make her "almost famous" German apple pancakes with cinnamon chips. First, she made German pancakes without the apples and found that the batter was too thin to support the chips and that they sank to the bottom. She solved that by letting the pancake cook for three minutes before sprinkling on the chips. That wasn't necessary with the German apple pancakes since the apples supported the chips and kept them from sinking to the bottom. Because she used a mix, they were quick and easy to put together. And with a load of cinnamon chips, they were very good.

How to Make Stuffed Pancakes

Add specialty chips—cinnamon, strawberry, raspberry, or blueberry—to almost any pancakes. It's especially scrumptious to match them up with a filling to make stuffed pancakes—like raspberry pancakes with a cream filling or blueberry pancakes with lemon filling.

What kind of syrup do you use with your special pancakes?

If you are using fruit chips in your pancakes, try blueberry syrup with blueberry chips or raspberry syrup with raspberry chips—though marionberry syrup seems to go well with any berries.

For cinnamon chip pancakes, try a caramel syrup. You can make a caramel syrup from scratch but Lawford's Vanilla Cream syrup is made with cream and is a light version of a caramel syrup.
